Ripe Olives for Oil
The olives are ripening for our first olive oil pressing sometime in November/December. We are waiting for all the olives to change color from green to black, get a little soft and turn purple inside. That way we will produce a sweeter oil. We hope to have it bottled early next year for sale. Our first harvest will be small but as our trees grow so does the volume of olives.
